Carrot Ginger Soup

Homemade soup with ZERO cream!


3 Cups Chopped Carrots (3 Large Orange, 2 Large White) 
2.5 Cups Low-Sodium Chicken Broth 
3/4 Large Yellow Onion
1 Tb Butter
1 Tb Ginger 


Step 1 Prep all ingredients. Chop carrots, onions and Ginger 
Step 2 In a large pot, melt butter over medium heat. Add onions and cook until soft (5-6 minutes) 
Step 3 Add chicken broth, chopped carrots and ginger. Put lid on pot and bring to a boil. Cook until carrots are soft 
Step 4 Blend soup until smooth
Step 5 Add salt and pepper to taste and enjoy!
