Shrimp and Chickpea Pasta Meal Prep

Lunches are ready for the week! I’m a huge fan of Choosing Balance and she turned me on to the Trader Joe’s pesto; It tastes good on EVERYTHING!


1 box Barilla Chickpea Casareece pasta 
1 container Trader Joe’s Genova Pesto 
Jumbo Shrimp – Costco
Garlic Salt – McCormick
Coconut Oil – Giant Foods


Step 1. Boil pasta and let cook (follow directions on box) 
Step 2. Heat sauce pan to medium heat. Grease with coconut oil
Step 3. Place raw and peeled shrimp in hot pan. Shake desired amount of garlic salt on top
Step 4. Flip shrimp until cooked
Step 5. Mix pesto sauce with pasta and add arugula 
Step 6. Place shrimp on top
Step 7. Enjoy now or put in containers and take them on the go!
