Chocolate Mint Matcha Cookies

Ingredients (cookie):

2 Cups Almond Flour
1/4 Cup Honey
3 TB Motha Butta sea salt vanilla coconut butter (from my Clean.Fit Box)
2 tsp Further Food mindful matcha powder 
1/4 tsp peppermint extract
1/2 tsp Baking soda
2 Tb melted coconut oil 
1 egg

Ingredients (chocolate topping):

4 Tb Nestle Toll House dark chocolate chips
1 tsp melted coconut oil 
1 tsp Vital Proteins collagen peptide powder


Step 1: Preheat oven to 450 F
Step 2: Mix all cookie ingredients together. Mix thoroughly. Batter should be sticky and hold together
Step 3: Form dough into 1 inch cookies. Do not make balls, cookies will keep their shape and will not rise/expand.
Step 4: Bake cookies at 350 F for 12-15 minutes or until edges are golden brown
Step 5: Let cookies cool for 5- 10 minutes before drizzling chocolate topping
Step 6: Put all topping ingredients in a small bowl. Microwave in 15-30 second increments until smooth and completely combined. (took about 1:15 for me)
Step 7: Drizzle over top warm cookies and enjoy!
