STUFFED PORTOBELLO MUSHROOMS. đ These mushrooms are so filling and are packed full of veggies! đ
Ingredients:
2 portobello mushroom capsÂ
2 medium mushroomsÂ
1 Cup spinachÂ
1/4 Cup chopped yellow onionÂ
2 slices (cooked) turkey baconÂ
2 stalks (or 1/4 ish Cup) chopped green onionÂ
1/3 Cup Parmesan cheese
Recipe:
Step 1. Preheat oven to 415 F
Step 2. Cook turkey bacon!Â
Step 3. Dice mushroom cap stems, mushrooms and yellow onion.Â
Step 4. Chop green onion and turkey bacon. Tear spinach
Step 5. SautĂ© in saucepan on medium until spinach wilts and onion & mushrooms are cooked 3/4 throughÂ
Step 6. Turn off heat and mix in Parmesan cheeseÂ
Step 7. Split mixture in half and stuff the mushrooms caps
Step 8. Place mushrooms on greased baking sheetÂ
Step 9. Bake mushrooms for 20-25 minutes. Portobello mushrooms should be fully cooked
Step 10. Top with freshly chopped green onion and enjoyÂ
