Chickpea Pasta with Homemade Spinach Sauce

Dinner today was AMAZING! 💥 I got home from work knowing I needed something green so I threw some spinach in the blender. 💚Came up with this absolutely delicious comfort (but healthy) Eat Banza meal! 😍


Ingredients (base and toppings):

3 cups Eat Banza chickpea pasta 
2/3 cups chopped cherry tomatoes 
Red pepper flakes

Ingredients (Sauce):

2 cups spinach 
2 Tbsp olive oil
1 Tbsp minced garlic 
1/3 cup Parmesan cheese 
1 Tbsp 
1 Tbsp lemon juice 

Recipe:

1. Blend all sauce ingredients together 
2. Boil water and cook the Chickpea pasta 
3. Add pasta, sauce and tomatoes to a bowl and mix well
4. ENJOY! 😁
