Chickpea Pasta Bake

She’s beauty, she’s grace, she’s my lunch for this week! 😂 Today I meal prepped a delicious veggie pasta bake and WOW did it look TASTY!! 🤤


4 cups Eat Banza chickpea rotini pasta
1.5 cups cherry tomatoes
1.5 cups arugula
1/2 cup shredded 3 cheese blend
1 cup quartered Brussels sprouts 


1. Preheat the oven to 375 F
2. Boil the pasta. Drain and pour into baking dish
3. Mix in all ingredients
4. Bake for 25-30 minutes. With 5 minutes left add 1/4 cup shredded cheese (if desired for melty topping)
5. Let cool
6. Scoop and ENJOY!
