So I have told you all before I am working to eat less meat. 🌱For now, it makes me feel good to eat a complete vegan/vegetarian meal, and add a small portion/side of meat. 🐓 I now know that I could have added beans to this vegan stir fry, removed the chicken, and been completely satisfied! 😋 Baby steps are still steps in the right direction!! 👍🏼
Ingredients:
2 cups mixed rice
1 small can peas and carrots
1 small can corn
1/4 cup chopped yellow onion
1/4 cup chopped green onion
2 tbsp veggie stock
2 tbsp soy sauce
1 tbsp Frank’s Red hot sauce
OPTIONAL:
1 air friend chicken tender with garlic salt
