Carrot Cake Cookies

HEALTHY CARROT CAKE COOKIES! 🥕 Yes, you heard that right. This genius idea came from GrubsByGabs. I literally just took these out of the oven and my entire house smells like a yankee candle 😋 (in a good way of course!!) — I altered the recipe slightly to fit my needs, for the original recipe go to Gabriella’s page!


1/2 cup rolled oats
1/3 cup wheat flour
1/2 tsp baking soda
1 tsp cinnamon
1/2 tsp nutmeg
Pinch salt
1 tbsp melted coconut oil
1 egg
1 tsp vanilla extract
1/3 cup maple syrup (or honey)
1/4 cup shredded carrots


1. Preheat oven to 325 F
2. Mix all ingredients together in large bowl
3. Recipe said to chill in fridge for 20 minutes, I went for a speed round — 5 minutes in the freezer
4. Place on baking sheet in small 2 inch flat pancake like cookies (cookies will not change shape much, ALSO batter is very sticky, I used a spoon to do this)
5. Bake on 325 F for 18-20 minutes or until golden brown
6. You are supposed to let cool and enjoy, but I ate one RIGHT out of the oven. They were amazing 💕
