OKAY. AGAIN. I know what you’re thinking. “Jenna stop baking.” I CAN’T 😡 I don’t know what’s going on in my home but I literally can not control my urge to bake healthy cookies and muffins EVERYDAY 😂
⭐️Here are some ooey gooey oatmeal chocolate chip cookies. SUPER IMPORTANT NOTE: do NOT over bake these. My first batch I did in the oven I over cooked and the sweetness disappeared, they were not good 🙅🏼♀️ (maybe a baking expert can explain this to me!!) BUT if you bake them to perfection (8-9 minutes as detailed below) they are so gooey and very sweet. 🍪
Ingredients:
1 cup Soulfull Project oats
2/3 cup almond flour
1 tsp baking powder
Pinch salt
1 tsp vanilla
1/4 cup mixed nut butter (any nut butter should work)
1/3 cup honey
1/4 cup Enjoy Life dairy free chocolate chips
Recipe:
- Preheat oven to 350 F
- Mix all ingredients together in a large mixing
- Form into balls (should make around 15 cookies)
- Place on greased baking sheet and make sure they are spread out. They will spread out quite a bit
- Bake for 8-9 minutes, they will appear slightly undercooked, but after cooling a bit they will solidify
- DO NOT OVER BAKE. If you over bake these the sweetness will completely disappear. (I know because my first 8 cookies were overcooked, LOL)
- Let cool for 5-10 minutes and enjoy!
