OK: this waffle maker has become a crucial part of my personality at this point 😂 These are MASHED POTATO waffles with a healthy twist. 🌪 Not the healthiest recipe I’ve ever made, but again, my motto is to always make healthier choices! (Emphasis on healthier, because this is much healthier than a loaded baked potato or a big pile of fries 🍟) This recipe makes 5-8 waffles depending how large you make them. 🧇
Ingredients:
2 medium potatoes
1 egg
1 tbsp minced garlic
1/8 cup diced yellow onion
1 tbsp plain Greek yogurt
1 tbsp melted butter
1/2 tsp garlic salt
1/2 tsp onion powder
1/2 tsp Italian seasoning
OPTIONAL: bed of arugula with an over easy egg and a drizzle of sriracha hot sauce 😋
