VEGETARIAN BURRRRITO 🌯 I have been dying to test my burrito wrapping skills again after I embarrassed myself with my chicken Caesar wrap (its about 7 posts back if you want to see 🙈) I think I redeemed myself 🌱
Ingredients:
1/4 cup chopped yellow onion
3/4 cup corn
1/2 cup black beans
Chopped cherry tomatoes (as many or as few as desired)
2 tbsp salsa
1 chopped green onion
1 cup rice (I used a Spanish style rice, but any work!) Mission Foods carb balance wraps
Diced avocado
Shredded cheese
Recipe:
1. Chop onion and add to greased sauce pan on medium heat
2. Add all other ingredients and cook until combined – about 5-10 minutes
3. Open wraps and place on flat surface
4. Add mixture into center of wrap and wrap tightly. Add in diced avocado and shredded cheese. There are videos on YouTube about how to wrap, I use the chipotle method
5. Warm another sauce pan on medium heat. Make sure to grease the pan
6. Once warm, place your wrapped burrito, crease down, onto the pan
7. Let the crease seal and the tortilla will get crispy. Flip and let the other side get crispy
8. Slice and enjoy!!
