Homemade Air Fried Chicken Tenders

This post is going to be focused on these HOMEMADE AIR FRIED chicken tenders that are seriously restaurant quality. ๐Ÿ‘๐Ÿผ


Ingredients:

6 chicken tenders
2 slices toast
2 eggs
1 tsp onion powder
1 tsp Italian seasoning

Recipe:

1. Toast bread
2. Add bread, onion powder and Italian seasoning to blender (makes bread crumbs)
3. Add 2 eggs and whisk to bowl A
4. Add breadcrumbs to bowl B
5. Dip chicken tender into eggs, then into breadcrumbs and than place into air fryer
6. Repeat with all chicken tenders
7. Air fry for 10 minutes or until chicken is fully cooked and coating is golden brown
8. Let cool and serve with your favorite side!

Speaking of sides, this quinoa mixture is just 2 cups cooked quinoa, 3 cups spinach, 1/4 cup chopped yellow onion, 2 tbsp stir fry sauce, and 1/4 cup chopped green onion!

Low Carb Cheese Pizza

Would you believe me if I told you this wasnโ€™t edited!! ๐Ÿ™ˆ I think I got the most perfect lighting this evening and snapped this amazing photo of my LOW CARB pizza ๐Ÿ˜‹


Ingredients:

2ย Cut Da Carb flatbreads as crust (stacked on top of each other)
1/2 cup tomato sauce
1/2 cup shredded mozzarella cheese
1 cup arugula
1 tbsp Italian seasoning
1 tsp garlic salt

Farro Salad

Made this delicious farro salad today to change things up! It was fresh, vegan, and SUPER clean ๐ŸŒฑ


Ingredients:

2 cups farro
1 can black beans
1 can chickpeas
1/4 cup chopped green onions
1/2 large cucumber diced
Juice from one lemon
1 tbsp garlic salt
1 tbsp lemon pepper seasoning

Fruit salad


This is the, every fruit from my fridge fruit salad. It included, grapes, strawberries, banana, clementines, apple, and raspberries. โค๏ธ I also mixed in 1 tbsp of lemon juice and a tiny bit of honey ๐Ÿฏ

Hummus & Cucumber Toast

Quarantine has me getting very creative with my meals and snacks! I am avoiding going to the grocery store, but I will breakdown and go soon ๐ŸŒฑ For now, I am enjoying this delicious hummus and cucumber toast! ๐Ÿž


Ingredients:

1 slice toast
2 tbsp hummus – I used Sabra
1/2 cucumber, sliced
Crushed red pepper flakes

Pasta Salad


I would like to preface this with: DONT COME FOR ME IN THE COMMENTS. I ran out of broccoli and carrots. I know there should be more veggies in here, but I ran out and didnโ€™t want to go to the grocery store ๐Ÿ™ˆ


Ingredients:

2 cups rotini whole wheat pasta
1 can diced black olives
1 cup torn arugula
1/2 cup cubed sharp cheddar cheese
1 chopped red pepper
1/4 cup (ish) lite Italian dressing

Chicken and Feta Meatballs

NO FILTER on these chicken and feta meatballs. ๐Ÿ˜‹ The grocery store was completely out of ground turkey so we went with this lean ground chicken! Still super delicious. ๐Ÿ”


Ingredients:

1 package (16 oz) lean ground chicken
1/2 cup shredded arugula
1/2 cup crumbled feta
1/4 cup chopped green onion

Recipe:

Step 1: Mix all ingredients together in large bowl
Step 2: Form mixture into 1-2inch meatballs
Step 3: Place on greased skilled. Medium heat. Put lid on and cook for 5-8 minutes. Make sure you flip them periodically and ensure they are cooked all the way through.
