Splendid Spoon

OK FRIENDS. I recently heard about a company called Splendid Spoon, a plant based meal delivery kit 🎃 As you may know, I have been on a journey to slowly decrease my meat/dairy consumption so this was THE PERFECT thing to try. 🥰 Here are my thoughts ⬇️

Splendid Spoon products are delicious, filling, convenient, nutritious, fun and VEGAN! (seriously my boyfriend who is very not vegan LOVED every meal we tried). AND if that’s not enough to convince you, they just brought back some of their fall favorites (pictured here) including the Roasted Brussel Sprouts Grain Bowl and the Pumpkin Spice Smoothie!! 🍃

Garlic and Honey Marinated Shrimp


I cannot explain how much happiness this meal brought me. I was watching @haleypham the other day and she tried to make marinated shrimp. Spoiler…it didn’t turn out well, so I knew I NEEDED to give it a try🍤


Ingredients:

16 oz. bag shrimp
2 tbsp honey
2 tbsp soy sauce
2 tbsp olive oil
1 tsp garlic salt
1 tsp paprika
Brown rice w/ spinach
Chopped cherry tomatoes
Green onion

Recipe:

1. Devein and peel shrimp
2. Mix honey, soy sauce, olive oil, garlic salt and paprika in large ziplock bag
3. Add shrimp to bag. Marinate in fridge for 1+ hours
4. Sauté shrimp on stovetop and enjoy!
5. I chose to serve my shrimp over brown rice, spinach, and cherry tomatoes

Vegan Mediterranean Bowl

Can we have a moment for my moms vegan cooking? 😍 My mom recently decided to start eating more plant based and she is doing SO GOOD! 👏🏼 These vegan Mediterranean bowls are so easy and seriously…the perfect meal ♥️


Ingredients:

1/2 cup brown rice
Baked veggies (broccoli, sweet potato, & zucchini)
Diced tomato
Diced avocado
Kalamata olives
Topped with a drizzle of homemade garlic hummus)

Classic Grilled Cheese

I always forget how delicious a classic grilled cheese sandwich can be. 🧀 Especially when you add extra toppings! 😋


Ingredients:

2 slices whole wheat bread
1 slice provolone cheese
Sliced tomato
Sliced avocado
Cilantro (because I add cilantro to everything)

Greek Chickpea Buddha Bowls

I have been making an effort to eat less and less meat these past few months. One of my FAVORITE vegetarian meals EVER is chickpea Greek Buddha bowls 🥗


Ingredients:

Air fried chick peas (tossed in lemon pepper seasoning)
Wild rice
Shredded spinach
Black beans
Corn
Chopped cherry tomatoes
Diced red onion
Feta cheese
Lemon juice
Hummus
Cilantro

Chicken and Veggie Meal Prep

Air fried chicken tenders with umami seasoning from Trader Joe’s
Cauliflower mashed potato’s with green onion
Sautéed zucchini and squash w/ garlic powder

Taco Bowl Dinner

Shredded arugula
Ground Turkey (w/ taco seasoning, onion powder, garlic powder, & chili powder)
Spanish rice
Corn
Black beans
Diced tomatoes
Diced red onion

Sausage and Veggie Dinner

My first dinner home! 🏡 My boyfriend and I spent the past few weeks living in an apartment in Washington DC and it was SO MUCH FUN! ♥️ I do have to admit, it feels amazing to be back home, in my kitchen, with all of my spices/seasonings, pots, pans, etc.


My first dinner back is a one pan meal with sweet Italian sausage, red pepper, yellow onion, zucchini, green onion and arugula! 😋

Sausage, Peppers & Onion Bowl

POST VACATION FUEL. I had so much fun visiting my dad in South Carolina this weekend. We explored Savannah, GA, drank wine, golfed, and relaxed by the pool 🍹 Here is my first meal back..so delish


Ingredients:

Sliced chicken apple sausage
Diced yellow onion
Diced orange bell pepper
Rough chopped spinach
Base: brown rice

Naan Pizza

Naan pizza is seriously THE BEST dinner! 🍕 I got these garlic naan breads from Amazon Fresh today and WOW! And pineapple belongs on pizza…I will not accept any other opinions 😂

1 piece garlic naan bread
Mozzarella cheese
Homemade tomato sauce (recipe 2 posts back)
Italian seasoning
Garlic powder
Sliced ham
Sliced pineapple
Diced cherry tomatoes
Spinach

Tortilla Pizza

1/4 cup shredded mozzarella cheese
2 spoonfuls tomato sauce
Diced fresh tomatoes
Handful arugula
