Air Fried Apples
THE BEST FALL DESSERT (hands down) is air fried apples. 🍎 Imagine apple pie filling, but packed with protein (from the side of yogurt) AND you can have it…every day 😋
Ingredients:
1 apple sliced – I did 1/2 inch slices
1 tsp cinnamon
1 tbsp coconut sugar (or brown sugar)
1 tsp lime juice
1 scoop vanilla Greek yogurt
1 drizzle honey – optional for topping
Recipe:
1. Slice apples into 1/2 inch thick slices – any size is fine but this will affect the cooking time
2. Toss slices with cinnamon, sugar and lime juice. Be sure to coat all the apples (add more/less cinnamon and/or sugar if you want!!)
3. Air fry on 400 for 8-10 minutes – be sure to toss half way through
4. Serve with yogurt and honey drizzle OR eat on their own!! Delish!! 🍯
BBQ Chicken Pizza
THE BEST low carb meal/snack…BBQ chicken pizza 🍕
Ingredients:
1 whole wheat Mission carb balance tortilla
1/2 cup shredded cheese (I usually use mozzarella but today I used Mexican blend)
1/2 cups shredded bbq chicken (made with 1 cooked and shredded chicken breast and bbq sauce of your choice)
Chopped cilantro
Pumpkin Spice Protein Pancakes
Woke up to a crisp fall morning….so this only felt appropriate. Pumpkin spice protein pancakes and Taylor swift. HAPPY FALL 🍁 🎃
Ingredients:
1 cup Trader Joe’s pumpkin pancake mix
2 tbsp melted butter
1 egg
1 cup almond milk (I used Silk unsweetened almond milk)
1 scoop vanilla protein powder (I used BodyBuilding.com signature vanilla)
Chocolate chips
Maple syrup (I used Giant brand lite syrup)
Pumpkin Spice Rice Kripies
My absolute favorite fall treat..pumpkin spice rice krispy treats 🎃
Ingredients:
3 tbsp coconut oil
1/4 cup pumpkin purée
1 10 oz bag marshmallows
1 tsp vanilla extract
1/2 tsp pumpkin pie spice
1/2 tsp cloves
1/2 tsp cinnamon
5 cups crispy rice cereal
(optional): 1/4 cup dark chocolate chips
Directions:
1. In a pot on low heat, melt coconut oil
2. Once melted, add pumpkin purée, marshmallows, vanilla, pumpkin pie spice, cloves and cinnamon
3. Mix on low heat until fully combined
4. Turn off heat and let mixture cool slightly
5. Pour in crispy rice cereal and stir until combined
6. Pour mixture into GREASED baking dish.
7. Let cool completely
8. Melt chocolate down (I microwaved mine in 30 second intervals until completely melted)
9. Drizzle over cooled Rice Krispies
10. Let chocolate cool/harden in fridge
11. Slice and enjoy!! Happy fall! 🍁

Air fried chickpeas. This bowl was delicious…easy and full of protein. 💪🏼
Ingredients:
1/3 cup crumbled ground Turkey (seasoned with McCormick Montreal steak seasoning)
1/3 cup air fried chickpeas (seasoned with garlic powder and lemon juice)
1 cup spinach (base)
1/2 cup chopped broccoli

You guys remember those mashed potato bowls that KFC sold? Yeah, that’s where I got this idea (minus the fried chicken – I wasn’t in the mood for meat today). 🤷🏼♀️

Ingredients:
Base is chopped spinach, butter lettuce, and purple cabbage
Grilled chicken
Chopped mushrooms
Sliced grape tomatoes
Cotija cheese
Diced cilantro
(Not pictured) dressing was lite caesar and a little bit of salsa
Breakfast Biscuit Egg Cups
Breakfast biscuit egg cups are THE EASIEST way to meal prep breakfast and the best part is – they last in the freezer for a few weeks! ❄️
Ingredients:
6 eggs
1 can of biscuit dough (you will have 2 leftover)
Pinch cheddar cheese
Diced green onion
Salt and pepper to taste
Recipe:
1. Preheat oven to 350 F
2. Slice biscuits in half
3. Place halved biscuit doughs in the bottom of a greased cupcake tin
4. Crack 6 eggs in a bowl
5. Add any ingredients you want! I added green onion and cheddar cheese (But you can add peppers, onions, spinach, etc)
6. Evenly pour the egg mixture into your 12 biscuit cups
7. Bake at 350 F for 18-22 minutes (tops of the eggs should be golden brown)
8. Let cool and enjoy!! I store mine in the freezer and reheat in the air fryer when I’m ready to eat!

1 cup shredded chicken breast
3 tbsp lite Mayo
1 tbsp Dijon mustard
Salt and pepper to taste
Topping: sriracha and green onion
On top of: sourdough toast
