Cranberry Lime Salad Dressing


Frozen cranberries have entered the chat šŸ’¬ My new favorite salad dressing flavor…cranberry lime. AND PLEASE look at the beautiful color šŸ’•


Ingredients (salad):

Base of 2 cups of spinach
Candied walnuts
Sliced strawberries
Feta cheese
Homemade cranberry walnut dressing (using the best frozen cranberries from Cape Cod Select)

Ingredients (cranberry lime salad dressing):

1/4 cup frozen cranberriesĀ Cape Cod Select
3 tbsp olive oil (add more/less depending on the desired viscosity)
2 tbsp lime juice
1 tbsp honey
Salt and pepper to taste

Add all the ingredients to the blender and blend! Add more or less of any ingredient listed, you really can’t do this wrong! 😊

Strawberry, Yogurt and Granola Bowl

Sometimes the simplest breakfasts are the best..Ā TargetĀ almond vanilla granola will be the flavor of the summer! I am OBSESSED šŸ˜


Ingredients:

SilkĀ almond milk vanilla yogurt
TargetĀ vanilla almond granola
Strawberries
Hemp seeds

Spicy and Sweet Peanut Butter Toast

I’ve shared this toast combo on my stories 1,000 times so it’s about time I share it in my feed. PLEASE hear me out..because this one does sound odd, but I swear it’s delicious šŸ˜‚


Ingredients:

2 slices Ezekiel toast
2 tbsp peanut butter
1 drizzle honey (pls ignore the honey explosion on the bottom toast)
Sprinkle of red pepper flakes
(Optional): sprinkle hemp hearts

Stovetop Tofu


Made this last night and IMMEDIATELY had to share šŸ˜ For years I’ve been experimenting with tofu and trying to get it perfect and FINALLY I made the perfect stovetop tofu šŸ™šŸ¼


Ingredients:

1 block tofu (firm)
1 cup broccoli
1/4 cup soy sauce
2 tbsp Honey
(Topping: sesame seeds)
(Topping: green onions)
(Base : 1/2 cup white rice)

Recipe:

1. Dice tofu into 1/2 inch cubes
2. Add to greased frying pan
3. Let tofu cook 10-15 minutes on medium heat, stir frequently
4. Mix honey and soy sauce together in a bowl. Pour over tofu in pan and coat all tofu cubes
5. Cook tofu until desired crispness (I cooked mine extra, I like it extra crispy)
6. Add in diced broccoli (I used frozen, and steamed in the microwave before pouring in)
7. Pour tofu and broccoli over rice
8. Top with chopped green onion and sesame seeds
9. Enjoy 😊

Homemade blackberry jam
Drizzle honey

Ingredients (toast #2):

Ezekiel toast
Mashed avocado
Hemp seeds

Drizzle honey

Shrimp Caesar Salad

This might be controversial, but am I the only one who adds LOTS of water to creamy salad dressing??šŸ˜… It has nothing to do with diet culture (lowering calorie count) and ALL to do with how it coats the lettuce so much better, idk maybe just me šŸ¤·šŸ¼ā€ā™€ļø


Ingredients:

Butter lettuce
Grilled lemon garlic shrimp
Parmesan cheese
Kalamata olives
Watered down creamy Caesar dressing (I swear it’s so good šŸ˜‚)

Trader Joe’s Stuffed Gnocchi


One of my favorite quick and easy meals = some combination of Trader Joe’s frozen item + fresh chopped up veggies. 🄦 This meal encompasses that perfectly ā™„ļø


Ingredients:

1 bagĀ Trader Joe’sĀ frozen stuffed gnocchi
1 cup chopped broccoli
1 cup chopped spinach

Stovetop Maple Brown Sugar Oats


Another day, another bowl of stovetop maple brown sugar oats šŸ


Ingredients:

3/4 cup almond milk
1/2 cup oats
1/2 sliced banana
1 tbsp packed brown sugar
1 tbsp maple syrup
1 tbsp chia seeds

Recipe:

1. Add milk to pot and bring to boil
2. Add oats, brown sugar, maple syrup and chia seeds
3. Stir until oats are fully cooked
4. Pour into bowl and top with maple syrup/cinnamon (optional)
5. LET COOL and enjoy šŸ˜

Chicken and Rice Meal Prep


My new favorite chicken, rice and broccoli meal prep (EXCEPT) this one isn’t boring šŸ˜‰


Ingredients:

2 lbs boneless skinless chicken breasts
Drizzle of avocado oil
1 tbsp paprika
1 tbsp garlic powder
1 tbsp Italian seasoning
Salt and pepper to taste
(Side) cilantro lime rice
(Side) steamed broccoli

Recipe:

1. Preheat oven to 450 F
2. In a medium baking dish, place chicken breasts
3. Sprinkle with seasoning and drizzle on oil. Using your hands (or tongs) cover chicken breasts with seasoning mixture thoroughly
4. Bake for 25-30 minutes – be sure chicken is fully cooked
5. Remove from oven, let rest for 10 minutes
6. Slice and add to meal preps!

Maple Brown Sugar Stovetop Oats

Rainy days call for cozy dinners. ā˜”ļø This bowl of maple brown sugar stovetop oats, ABSOLUTELY added to the cozy vibe I was going for.


Ingredients:

3/4 cup almond milk
1/2 cup oats

Salmon and Rice Meal Prep

Did some meal prepping this weekend and I have to say, this is some of my best work šŸ’šŸ¼ā€ā™€ļø These salmon and rice bowls are 10/10


Ingredients:

4 6oz. Salmon filets
2 tbsp olive oil
Juice of 1/2 lemon
1 tsp garlic powder
Salt and pepper to taste
Use other 1/2 of lemon for topping
Sides: 1 cup cilantro lime rice and salt and pepper steamed green beans

Recipe:

1. Preheat oven to 350 F
2. Place salmon filets on greased baking sheet
3. Make topping in bowl.
Mix olive oil, lemon juice garlic powder, salt and pepper
4. Drizzle mixture on top of salmon and top with sliced lemons
5. Bake for 15 minutes
6. Remove from oven. Measure out your sides (for me, it’s cilantro rice and green beans) and place in meal prep containers
7. Add salmon to Tupperware. Store in fridge for 3-4 days.
